Thanksgiving is a fun day filled with food, friends, and family plus a lot of time and sweat spent in the kitchen. Usually all this good food results in plenty of leftovers both for guests to take home and you to get crafty using in the kitchen. Since I sometimes lack inspiration when trying to use leftovers in new ways I have compiled a list of truly inspired Thanksgiving leftovers. Hello Fall! The Apples Are Here!

I love summer and all the berries, melon, and stone fruit that come with it but there is something magical about fall. The air is crisp, mornings are cool, I still get plenty of sunshine, and nature takes on a whole new display of color. Fall to me also means turning on the oven, baking exploits with apples and squash, and an almost never ending supply of canned pumpkin stocked in the pantry.

We’ll start fall off with a round up of apple recipes I have my eye on (we’ll get back to squash later, promise!). Apple picking season is upon us and that means apple butter, applesauce, apple crisps, apple doughnuts (if you are feeling indulgent), and so much more in your future. With the start of the school year, morning times can get pretty hectic trying to get everyone dressed, fed, backpacks packed, and out the door in time. This recipe developed by Cynthia is a great choice for a quick breakfast packed full of flavor and protein for the busy weekday mornings. Pair the Mexican egg cups with a piece of fruit and a glass of water or milk and you have a balanced breakfast.
