April showers bring May flowers and a fresh crop of produce to the grocery store. Just when you might be getting tired of apples and winter squash the spring finds start to crop up. You’re probably seeing more fresh berries, apricots, summer squash, and spring peas in the market. There are so many colorful and healthy fruits and veggies to choose from at the market. Check out some of my favorite market finds for spring time!

rhubarb Rhubarb

Love this veggie! The red-hued stalks of this vegetable are popping up in all sorts of recipes this time of year from the classic strawberry rhubarb pie to a marinade for chicken. One cup of rhubarb is a great source of potassium, calcium, and vitamin C. Be daring this spring and try using rhubarb in a new way – a marinade or chopped on a salad perhaps. Just be sure to steer clear of the leaves, they’re poisonous! read more
